So summer has finally arrived and in celebration of lockdown nearly being over, I want to share my easy and delicious berry crumble recipe. Firstly, summer is the best time for berries as they are ripe and juicy and secondly what better way to eat them than in a special dessert which is a classic family favourite. Moreover, this recipe combines all my favourite berries: cranberries, raspberries, blackberries and strawberries. So if you have a sweet tooth or are looking to impress your family and friends, then this is the recipe for you!

What is a Berry Crumble?

A berry crumble is a classic british dessert.  It involves melting down the berries with sugar and topping it with a flour buttery crumb, that becomes crunchy and yummy in the oven as it bakes. It is best served hot with some vanilla ice cream or double cream poured on top. Alternatively, you can also serve it with my homemade custard (the recipe which you can find in the desserts section).

Serves: 4 people (Small baking tin) . Vegetarian. 1 of 5 a day.  Prep time: 20 mins.  Baking time: 40 mins

Ingredients:

  • Fresh Strawberries, raspberries, cranberries and blackberries, a handful of each (6/7 each)
  • 2 cinnamon sticks
  • Quarter  of a lemon
  • 150 grams of brown sugar
  • 1 tablespoon of honey
  • 250 grams of plain flour
  • 1 teaspoon of madigascan vanilla/ or any vanilla flavouring
  • 100 grams of butter
  • 50 grams of oats
  • Cashew nuts or brown nuts of your choice

Recipe Method

  1. Place the berries in saucepan  and add 100 grams of sugar and cinnamon sticks and squeeze in the lemon juice. Pro-tip – Squeeze the lemon juice through your hand or a spoon so that you can catch any pips.
  2. Cook the berries on medium heat until they soften and the mixture starts to thicken. Stir occasionally and add a splash of water to help the sugar to melt. This should take around 10 minutes.
  3. Turn the heat off when the mixture is the same consistency as honey and the berries have softened and shrunk in size.
  4. Add in a spoon of honey for extra sweetness and mix and then leave it to cool. (You can leave out this step if your berry sauce is sweet enough)
  5. Meanwhile, pour the plain flour into a mixing bowl along with 50grams of brown sugar, madagascan vanilla and the butter.
  6. Use both hands to rub the butter and flour together. A crumb like texture should be formed once everything is combined well. If your mixture is too wet add more flour and if it is too dry add more butter.
  7. Chop up the nuts and add that to the crumb mixture along with the oats.
  8. Pour the berry mixture into your baking tin once it has cooled and top it off with the crumb mixture.
  9. Place the baking tin in the oven for 40 minutes at 180 degrees. Take out when the top has become golden brown in colour.
  10. Serve with my homemade custard recipe or double cream/ice cream for a luxurious taste. Enjoy!

Health Advice: If you or your guest has diabetes, then feel free to use a substitute sugar for cinnamon powder as an alternative. Also, leave out the nuts if you or your guest is allergic.
